Cold Comfort Foods (for the Camper, of Course)

So I’ve covered yer non-perishable staple foods in my Camper Comfort Foods blog post and now I’m going to tackle the perishables –food that should be in the fridge or freezer.

This is a little more difficult to outline because your family’s eating habits are probably somewhat different from mine. So I’ve given you my list for a five day camp-out. Here’s my basic camping menu plan for 5 – 7 days. For weekend trips it’s pared down of course.

Again, make this yer own by taking the basic concepts and customizing it to yer families eating habits.

Breakfasts –we don’t always cook breakfast and sometimes breakfast becomes brunch but here’s what I like to plan for:

  • · Eggs Benedict
  • · Bacon, eggs & toast (or fried potatoes if we have leftovers)
  • · Pancakes and bacon
  • · Cereal
  • · Toast and peanut butter, jam &/or Nutella
  • · Breakfast wraps (this is usually scrambled eggs and cheese with left over meat &/or potatoes)

Lunches –sometimes we all eat lunch together; other times we eat when we’re hungry. Below are options for both scenarios:

  • · Ham and cheese (or grilled cheese) sandwiches & soup
  • · Peanut butter, jam &/or Nutella sandwich
  • · Wraps (using salad, cheese, salad dressing or dip and leftover meats)
  • · Mac ‘n’ cheese
  • · Tuna or salmon sandwiches (or flavoured tuna on rice crackers)
  • · Soup and toast or sandwiches
  • · Beans on toast
  • · Leftovers

Dinners –this is the one meal that I plan in advance. Although I don’t decide ahead of time in which order I’ll cook each meal, I know what I’ll be making for each meal. I also like to cook those meals that I expect leftovers from earlier in the trip so we have more lunch options. Below is a sample menu; I do like to mix it up:

  • · Chicken breasts, marinated with potatoes (mashed, scalloped or fresh) and salad
  • · Steaks (prepared with my sister’s recipe), baked potatoes with bacon, sour cream and chives and grilled onions and mushrooms (or other veg)
  • · Burgers or sliders with Caesar salad –I like my burgers with bacon, blue cheese and hickory smoked mayo so I pack these things in addition to what’s on the list below
  • · Pork chops with Greek seasoning or marinade, rice and Greek salad
  • · BBQ Beef ribs (boiled ahead of time), fettuccini Alfredo and salad
  • · Smokies with salad

I also like to have things to snack on. My go-to’s are yoghurt, cheese strings, sunflower seeds and granola bars. I also pack sparkling juices as a treat for the kids.

Fridge –make sure fridge is turned on ahead of time so it’s cold when you pack your food. For longer trips we also pack a cooler full of ice for extra storage space and to keep drinks cold.

Bread, buns, wraps, English muffins –if you don’t store this in the fridge (or cooler) it can go moldy fast if the weather is hot.

Eggs, Sliced ham, Bacon, Butter or margarine, Jam, Pancake syrup, Milk

Cheese –I pack feta and Parmesan in addition to cheddar (for Greek and Caesar salads) as well as blue cheese for my burgers

Salad fixin’s –for me that’s lettuce, tomato, cucumber, red peppers and fresh black olives.

Vegetables –at a minimum I like to have mushrooms on hand for grilling and carrots for snacking but I’ll often just bring whatever I have in my fridge at home that I want to use up.

Onions, Potatoes, Chives, Sour cream, Yoghurt, Cheese strings

Salad dressing –you can also make yer own if you’ve used my packing list

Condiments –mustard, ketchup, relish, mayo etc. –whatever you can’t live without!

Tabasco & Worcheshire sauce, Lemon juice, BBQ sauce, Salsa, hummus &/or other dip for tortilla chips

 Freezer –same as the fridge

Burgers or sliders, Smokies, Chicken breasts, Steaks, Pork chops, Ribs

Freezies –for the kids

So, same deal as before; hopefully I’ve sufficiently covered the bases. Let me know if I haven’t.

Camper Comfort Foods

I love food –Thai, Greek, Indian, fusion—and I’m also one of those health nuts who usually take the time to make it from scratch. When it comes to camping though, a bit of compromise is in order. Not willing to give up flavour, I opt for a few more pre-packaged options than I do in my own home.

So, fast on the heels of my Camper Comforts and Kitchen Camper Comforts blogs is a list of the foods I like to keep on hand in my camper. You’ll probably want to modify this list to suit your own tastes but this will give you an idea of the bases you’ll want to cover:

Canned Goods:

Soups –I usually stock two tomato and two cream of mushroom. That’s two lunches for my family of four.

Baked Beans –campers are small, confined spaces so I also pack Beano; that’ll be covered in a future blog.

Mixed Beans  –for bean salad.

Tuna and Salmon –aside from regular tuna I also like to have five or six individual-sized, flavoured tunas on hand. I’ll snack –or lunch— on these with rice crackers.

Boxed Goods:

Instant mashed potatoes –I bring real potatoes too but these are nice to have on hand if I run out or don’t want to put in a lot of effort. After all, I am on vacation!

Minute rice –brown minute rice is now available and that’s what I buy.

Noodles –I have a box of macaroni noodles for salads and fettuccini for pasta dishes.

Scalloped potato mix –same deal as the instant mashed potatoes

Cereal

Mac ‘n’ cheese –I only pack two boxes ‘cause I don’t want to have it more than once. Of course I can always opt out with flavoured tuna and rice crackers…

Chicken noodle soup packets

Spices and Seasonings:

Salt and pepper

Montreal Steak Spice –my sister, Dawn, showed me a great way to prepare steaks. This is one of the ingredients and I always make sure I have everything on hand –especially when I’m camping.

Beef and Chicken bouillon

Seasoning Packets:

Marinade &/or rub mixes for beef, chicken &/or pork

Gravy mix

Hollandaise sauce mix

Alfredo sauce mix

Pasta salad mix

Snacks:

Tortilla chips –&/or potato chips if that’s yer thing

Crackers –saltines for soup, graham for s’mores and snack crackers of your choice (mine are rice crackers).

Marshmallows – for s’mores of course!

Granola bars –I don’t allow these in my house because of their high sugar and fat content but they’re an easy snack (and treat) when we camp.

Spitz –aka sunflower seeds. And no shells on my carpets!

Other:

Coffee &/or tea –also pack filters for the coffee machine!

Sugar &/or coffee whitener

Peanut butter

Honey

Nutella –I don’t have this at home but it’s become a camping treat for the kids. Is also an easy way to make s’mores if I run out of chocolate.

Olive oil

Canola oil

Red wine vinegar

Croutons

Case of bottled water  –we bring a 20 litre water container but I like to have bottled water on hand just in case we run out. We store this in the shower to save space.

Sparkling Juices –as a treat for the kids. We don’t do pop, even camping.

So that’s about it for the stuff that keeps. Next blog will discuss the things you’ll need to pack for the fridge and freezer. Again, let me know if I’ve missed something you find essential. :)
